Strawberry Chia Breakfast Jars
Ingredients:
1 cup frozen berries
1.5 cups milk of choice
3 T protein powder
1 T monkfruit (or to taste)
⅔ C chia seeds
1 C yogurt of choice
Optional Toppers:
Fresh berries
Cacao nibs
Nuts
Method:
Blend frozen berries, milk, monkfruit & protein in blender on high until smooth. Pour into medium bowl.
Whisk in chia seeds & refridgerate for 30 minutes.
Remove bowl from fridge and stir pudding. Place back in fridge until set (shouldn’t take much longer).
Once pudding is set, layer yogurt, then pudding into pint size mason jars or similar.
Seal jars and refridgerate until ready to eat.
Prior to eating, stir in optional toppers and enjoy!
Notes: I use almond milk and coconut yogurt to make it dairy free. Using full-fat Greek yogurt, if you can tolerate it, bumps up the protein significantly.
