Strawberry Chia Breakfast Jars

Ingredients:

1 cup frozen berries

1.5 cups milk of choice

3 T protein powder

1 T monkfruit (or to taste)

⅔ C chia seeds

1 C yogurt of choice

Optional Toppers:

Fresh berries

Cacao nibs

Nuts

Method:

  • Blend frozen berries, milk, monkfruit & protein in blender on high until smooth. Pour into medium bowl.

  • Whisk in chia seeds & refridgerate for 30 minutes.

  • Remove bowl from fridge and stir pudding. Place back in fridge until set (shouldn’t take much longer).

  • Once pudding is set, layer yogurt, then pudding into pint size mason jars or similar.

  • Seal jars and refridgerate until ready to eat.

  • Prior to eating, stir in optional toppers and enjoy!

Notes: I use almond milk and coconut yogurt to make it dairy free. Using full-fat Greek yogurt, if you can tolerate it, bumps up the protein significantly.
